A look at the "flavor industry", where food scientists take advantage of the latest research in chemistry and biology to design enticing flavors for consumers. The article does not reveal the secret ingredient in McD's french fries, although it does confirm that it is a "natural flavor" from an "animal source".
I was surprised to learn that there are now six basic tastes that the tongue can detect -- sweet, sour, bitter, salty, astringent, and umami. I guess they've discovered a couple more since I was in junior high...
